Chef Dave Fouts Chef Dave Fouts received his culinary degree in 1994 from the Florida Culinary Institute in sunny West Palm Beach, Florida, USA. Soon thereafter he was hired by the prestigious AAA Five Diamond Award-winning hotel “The Breakers” in Palm Beach, where he worked for several years. Other professional appointments include director of food services at Hippocrates Health Institute, one of the premier vegan/vegetarian resorts in South Florida; executive chef for Omni Hotels; and personal chef for a wonderful family in Naples, Florida. In 2008, Chef Dave joined talents with Vicki Bovee, MS, RD, LD, and started Simply Smart Food, Inc. Currently Simply Smart Food, Inc., is serving as a consultant for Allergan Canada, Obesity Help, Inc. and JourneyLite, a subsidiary of ASCIRA LLC. Chef Dave is the creator of the Simply Smart Food elementary school lunch pilot program which is being hailed a success in the Edmond Oklahoma Public School District for eliminating processed foods and bringing scratch cooking back to the schools.

Over the last several years, Chef Dave has written, contributed and advised on several editorial boards for publications throughout the States. Chef Dave is the exclusive chef for WLS Lifestyles magazine. Chef Dave has authored three cookbooks, Cookwise, Ditch Your Diet in 30 Days, and his newest cookbook, Weight Loss Surgery for Dummies.

These days, you can find Chef Dave lecturing and performing cooking seminars across the States. He advises on food and product developing teams for companies such as Keebler, Uncle Ben’s, Coca-Cola, PepsiCo and many others. In addition Chef Dave is on the advisory board for WLS Lifestyles and Obesity Action Coalition. Besides his national speaking engagements, Chef Dave is kept busy in Edmond, Oklahoma, where he lives with his wife and two children. He is actively involved in his community and work, and enjoys leisure and travel time with his family.

Vicki Bovee, Nutritionist

Vicki Bovee, MS, RD, LD Vicki Bovee, M.S., R.D., L.D., is a registered dietitian with the American Dietetic Association. She has over 25 years experience in weight loss, weight management, and has specialized in bariatric nutrition since 2003. Over the years Vicki has worked with thousands of patients in clinical, research, and business settings to help them manage their weight through lifestyle changes. Prior to combining talents with Chef Dave, Vicki was the clinical dietitian at Western Bariatric Institute, Reno, Nevada. She also held a faculty position in the University of Nevada School of Medicine, Reno, Nevada.

At this time, Vicki works with weight loss surgery patients before and after surgery conducting classes and individual counseling sessions and developing patient education materials. She is the author of numerous articles and several book chapters emphasizing healthy eating in relation to weight management and weight loss surgery. Along with Chef Dave Fouts, Vicki has written “Ditch Your Diet in 30 Days” and weight loss surgery preoperative and postoperative recipes booklets. Their latest publication is "Weight Loss Surgery Cookbook for Dummies."

Vicki is a member of the American Dietetic Association, American Society for Metabolic and Bariatric Surgery, and Obesity Action Coalition. She currently serves on the advisory board for Obesity Action Coalition and WLS Lifestyles publications. Vicki received her master’s degree in nutrition from Montana State University and her bachelor of science degree in home economics from the University of Wisconsin- Stevens Point. She lives in West Vancouver, British Columbia with her husband, Bill.
